While we do enhance our appearance through skin care products and beautiful clothes, more importantly we believe in nourishing our skin through food. One of the many beauty food that we always have in our pantry is snow fungus.
BENEFITS OF SNOW FUNGUS
Snow fungus is widely used by Asian woman as a beauty food and product. It is reported to increase moisture retention in the skin, reduce wrinkles and smoothen fine lines. It also helps increases the presence of superoxide dismutase; an enzyme which acts as a potent antioxidant throughout the body (Source: International Journal Of Medicinal Mushroom).
As snow fungus is tasteless, this soup is flavoured with rock sugar and pandan leaves.
Snow fungus x 1 (fist size)
Rock sugar x 200 g
Pandan leaves x 2o pcs
Water x 1.5 litres
TO PREPARE INGREDIENTS:
Soak snow fungus in a bowl of water for 30 minutes. With a pair of scissors, cut the soft part of the fungus into small pieces. Fold pandan leaves and hold it in place with toothpicks. You can also tie them into knots.
TO BOIL SOUP:
Put all ingredients into a pressure cooker and cook for 1.5 hours. Alternatively, you can boil it in a pot on for 3 hours over the stove.
This soup is good to enjoy warm or cold. You can also keep them in the fridge for a few days.
