Salad is a dish that is quick to throw together. Mediteca, a posh yet casual restaurant in Kuala Lumpur, showed us how to make an easy yet delicious salad: tomato chorizo salad.
People say that everything tastes better with bacon. The same goes with chorizo. It adds a lot of flavour to the salad. Chorizo is normally made from pork and the deep red colour comes from dried smoke paprika. According to the chef, you can eat it raw too.
YOU WILL NEED
Roma tomato x 2
Basil leaves x 2
Garlic, baked in salt x 5 cloves
Chorizo x 5 gm (3 tsp)
Apple cider x 5 gm (1 tsp)
Leek confit x 10 g (2 tsp) (cook leek in olive oil)
Extra virgin olive oil x 1 tsp
Mix all ingredients together.
Making tomato chorizo salad at home
- In Mediteca all ingredients are prepared daily. For this recipe, you will need to cook chorizo, roasted garlic and leek confit- all which would take a few minutes each to prepare. If you have little time, we suggest cooking all of these together.
- The chef emphasized the importance of using roma tomato as it is much sweeter. Local tomatoes are not recommended.
- You can buy chorizo from Bottega Mediterranean (address below) or possibly the non-halal section at Ben’s Independent Grocer at Publika and Jaya Grocer at Intermark. Otherwise, just use gourmet sausages.
There you have what we think is the perfect ‘introductory salad’ to those who have yet to appreciate vegetables. The dish that makes them think that salad can be tasty. It’s great for most kids and partners you want to trick into eating more vegetables than they think they do.
