BENEFITS OF PEARL BARLEY
Barley is a low-glycemic grain which helps keep sugar level under control. It could also prevents cancer because its high fibre content helps speed food through the digestive tract. It’s high selenium content also shows to reduce the risk of colon cancer. (source: Oprah)
Boiled eggs x 2
Cooked pearl barley x 1/4 cup
Mayonnaise x 1 tbsp
Black pepper to taste
Salt to taste
Whole meal bread x 4 slices
TO COOK PEARL BARLEY:
Boil barley with water for 1.5 hours. Keep the liquid for a cooling barley drink.
TO MAKE SPREAD & SANDWICH:
In a bowl, mash boiled eggs and barley with a fork. Season with salt, black pepper and mayonnaise. Mix well. Spread mixture on wholemeal bread.
Pearl barley from this recipe is a by product of barley drink. Instead of throwing away and wasting the high fibre grains, we like to save and incorporate it into our daily meals.
