Due to the haze, we were advised by caring family members to drink more water and prepare soup that is beneficial for our lungs. So we made watercress soup which is both nutritious and delicious. A winning combo if you ask us!
BENEFITS OF WATERCRESS
Watercress is filled with vitamin A, chlorophyll, sulphur, and calcium. Traditional Chinese Medicine states that this vegetable helps dissolves yellowish phlegm due to heat condition of the lungs (source: A Tradition Of Soup by Teresa. M. Chen). Watercress is also diuretic, clearing facial blemishes and improves night vision.
Pork x 500 g
Watercress x 250 g
Red dates x 6 – 8 pcs
Honey dates x 2 pcs
Dried squid x 2 slices
Apricot kernel seed x 1 tbsp
Water x 1 litres
Salt to taste
TO PREPARE INGREDIENTS
Blanch pork in hot water. Rinse the rest of the ingredients – watercress, dried squid and apricot kernel seed. Slice red dates into half.
TO MAKE SOUP:
Put all ingredients into a big pot along with water. Bring to a boil and simmer with lid close for two hours.
- Pork can be replaced with chicken.
- Apricot kernel seed and dried squid are optional. The latter gives the soup a richer taste, perfect for those who are not used to drinking Chinese soup.
