Nam Yu / Red Beancurd Fried Chicken (3 ingredients)

Fried chicken seems to be a universal favourite, for both adults and kids. Poultry is also not forbidden in any religion, hence making fried chicken a popular dish to serve at a party. We decided to make something special and very Asian for our friend’s birthday party:  nam yu (red beancurd) fried chicken

Another advantage is that it can be prepared earlier. We marinated the chicken a few days before the party and kept it in the freezer. Besides reducing work on the day for the party, marinating the chicken for days allows the chicken to soak in the flavour. A day before the party, we moved the chicken into the fridge to defrost. Ingredients
> Chicken, chopped into pieces…………….1
> Red beancurd…………………………………..4 pieces
> Sugar……………………………………………….1 tablespoon
> Chinese wine……………………………………………..2 tbsp
> Oil………………………………………………….2 cups

Tutorial

Fried Chicken

  1. To make a paste to marinate the chicken, mixed mashed beancurd, sugar and chinese wine.
  2. Mixed the paste and chicken together to marinate.
  3. Make sure the paste coats all the chicken pieces evenly and marinate for at least 24 hours. You can keep it in the fridge or freezer.
  4. Heat the oil in a wok for about 5 minutes. To test whether the oil is hot enough, put a chopstick into the oil. If the oil bubbles, it is ready. You can then put chicken into the oil to fry until it turns golden brown. That should take about 10 – 15 minutes.
  5. Drain chicken on paper towels before transferring on a service plate.

Notes

  • You can buy chicken parts such as chicken wings and drumsticks.
  • However, we prefer to buy a whole chicken because of variety. Ask the butcher to cut them into pieces.
  • It is important to make sure that the chicken is fry properly so it would be cooked inside out.
