LUNCHBOX MONDAY: Super Simple Pumpkin Porridge (2 ingredients)

Pumpkin is one of the healthiest food on earth. The bright orange colour of pumpkin is a sign that it is loaded with beta-carotene, an antioxidant. It helps the body to generate vitamin A which is great for our skin and vision. However, we Malaysians probably rarely consume this plant as it is not commonly used in our local cuisine.

The easiest way to have it in Malaysian food is probably through porridge. Afterall, there are a few eateries in Malaysia offering pumpkin porridge steamboat. This is a basic recipe which uses only rice and pumpkin, without any flavourings. As usual, we prefer to use unrefined brown rice as is it more nutritious.

INGREDIENTS
> Pumpkin, chopped into cubes……………….500 g
> Brown rice…………………………………………..1 cup
> Water…………………………………………………6 cups

TUTORIAL

  1. Add all ingredients into the rice cooker.
  2. When it is ready, you might want to crush the pumpkin with a fork or potato masher.
  3. Add flavouring of your choice: soy sauce, salt, chili powder, etc.

LUNCHBOX TIPS

  • This recipe is great on days where you don’t feel too well and have limited appetite. Porridge is good for the sick as it is easier to digest than solid food.
  • If your office do not have a microwave, keep this porridge in a flask instead.
  • Do add a fried egg, steam vegetables and bring along a piece of fruit for a balanced meal.
