How to make chicken essence at home

My search on food that boost energy led me to chicken essense, a traditional Chinese supplement. So nutritious and valuable, this liquid gold is normally reserved for the sick, new mothers and students who are about to face major exam.


My mother told me that during her after birth confinement (a practice where new mothers stay indoor for a month), she had a bowl of chicken essence everyday. It was so important to my family that my late grandmother will buy few chicken daily to make chicken essence and other nutritious dishes! Up till now, my mother always credit one of the reason to her robust health to good confinement (a positive outlook in life being another).

What is chicken essence and why is it good for you?


What is chicken essence
Chicken essence is the juices from the flesh and bones of chicken. It is extracted by double-boiling the chicken in high temperature for about three hours. The extract contains highly nutritious active components like protein, peptides, mineral, trace elements etc.

How To Make Chicken Essence At Home

Health benefits
Originated since the Ming Dynasty, chicken essence is a health tonic that is now proven to have positive effect on recovery from fatigue caused by mental overload (source: Nagai, Harada & Nakagawa 1996). For over 600 years, the Chinese has been consuming the tonic for strength and vitality.


The recipe passed down from one generation to another. When I asked  mother how she learned to make it, she said in a matter-of-factly manner “There is no need to learn. Every woman knows how to make it”. Although it is time-consuming, I am pleased to find that it is rather easy to make; it is a matter of assembling things. All of the things that we need are easily found at home.


> Chicken, small, preferably free range or organic x 1 (skinned and cut into big chunks)
> Stock/soup pot x 1
> Large porcelain bowl x 1
> Small porcelain bowl x 1
> Plate to cover large porcelain bowl
> Pestle

HOW TOHomemade essence of chicken


1. Pound chicken pieces with a pestle, crushing both he flesh and the bones.
2. Put smaller bowl, upside down, into the bigger bowl.
3. Place pounded chicken over the smaller bowl.
4. Cover big porcelain bowl with a plate.


5. Place the entire bowl in a stock pot.
6. Pour water into the pot until it covers half the bowl.
7. Cover the pot and double boil for 3 hours.


8.  Remove bowl from pot and gently remove chicken pieces.
9. The essence of the chicken will drip into the smaller bowl.
10. Scoop liquid into serving bowl and serve

Now your nutritious, homemade essence of chicken is ready!

    The smaller bowl is upside down. The water is outside the bigger bowl. My upside down bowl has not caught the drippings, except as they fell on the outside while it was sitting upside down.

    Well, I need to correct my understanding! I have made your recipe, and I now see what you meant about the smaller bowl. I was correct in that the chicken drippings do not drip into the smaller bowl, but I now see that the drippings collect underneath the bowl’s rim and does not fill the bigger bowl until you lift it up. So, in a certain way, it is the smaller bowl that is collecting the drippings. Sorry for my confusion, and I just wanted to make it correctly.

    I need clarification please as I have NOT understood the above No. 6 instruction/direction.

    Should all the water fall INSIDE the stock pot? … and therefore, by default, OUTSIDE the large bowl and being till half the EXTERNAL-height of that larger bowl ?

    Yes, you are right.

    The water should be inside the stockpot (hence outside the large bowl).

    Sara – Do you have any recommendations for people recovering from SHINGLES – especially for the PHN ? i.e. the nerve pains that befall a patient and continuing well after a patient has otherwise recovered from the main attack/bout ….. these pains remain and result in sporadic aching of the nerve area ……. usually the skin located around the original area where the shingles’ blisters had first appeared? ( Had read somewhere that some type of a cure made from capsicums – pepper based mix – is held to be a good relief from such pains! )

    OK, thanks Sara – When I find out something suitable, I can let you know….. (it’s a very common affliction un the UK for mainly the over 50’s population – some 1 in 10 get it in their lifetime …. it’s related to the chicken pox jab given to all when young, etc)
