Carrot & Coriander Soup (5 ingredients)

For us, the easiest way to have more veggies in our daily meals is through vegetable soup. We like dense, western soup which vegetables are cooked and then blended.

carrot and coriander soupOur favourite is definitely roast tomato soup and followed by watercress soup. They carry a beautiful bright red and muted green respectively. This time, we wanted to make something orange: carrot and coriander soup.carrot and coriander soup

INGREDIENTS
> Carrot, peeled and chopped …………………………….. 450 g (About 4 big carrots)
> Potato, peeled and cubed…………………………………. 2
> Coriander leaves……………………………………………… 2 cups
> Onions……………………………………………………………. 1
> Water or chicken stock…………………………………….. 1.2 litres
> Butter……………………………………………………………….1 tbsp
> Sea salt……………………………………………………………..to taste (we used about 2 1/2 tsp)

TUTORIALcarrot soup

  1. In a pot, melt butter and fry onions until they turn translucent. It should take about 5 minutes.
  2. Then fry cubed potatoes until they turn brown.
  3. Add water and chopped carrot into the pot. Bring to boil and simmer with the pot covered for an hour.
  4. Add coriander into the soup and cook for another two minutes.
  5. Blend soup with an emulsion blender. If you don’t have one, pour into a blender. Add salt to taste.

Serve it hot with a sprig of coriander. We personally love it serve with generous sprinkles of black pepper.
